About

Long before a beet develops its deep purple root underground, it begins life as a small seedling topped with vivid magenta stems, colored by the same pigment that gives the mature vegetable its signature hue. Beet microgreens capture that color, along with a gentler version of the vegetable's earthy character, in a single delicate leaf.


Flavor Profile & Texture

The flavor is earthy and mildly sweet, a gentler, more approachable version of a mature beet's flavor, without the sometimes-overwhelming earthiness that puts some people off the full-grown vegetable. Texturally, the stems are tender but retain a bit of crunch, while the small leaves are soft, so the whole microgreen is delicate rather than crisp.

Keeping It Fresh
