Rumex sanguineus
About
Sorrel has grown wild along hedgerows and forest edges for centuries, valued by foragers long before it found its way into cultivated gardens. Red veined sorrel microgreens carry that same tart, lemony character forward, marked by the deep red veining that gives the variety its name.
Flavor Profile & Texture
The flavor is sharply tart and lemony, closer to citrus than to any typical leafy green, with a clean, almost sour finish. Texturally, the leaves are tender and smooth, patterned with striking red veins running through otherwise deep green foliage.

Complementary Meals
Breakfast: Scatter a few leaves over eggs Benedict or another rich, hollandaise based breakfast dish, where the tartness cuts nicely through the richness.
Lunch: Fold into a citrus salad with avocado, or use as a bright garnish on a cream based soup at lunch.
Dinner: Use as a finishing touch on seared scallops, oysters, or a rich fish dinner, where its lemony bite balances buttery sauces.
Drink Pairings
Wine: A high acid white such as Sauvignon Blanc mirrors sorrel's own tartness. Wolf Mountain Vineyards & Winery in Dahlonega, GA, produces whites well suited to this pairing.
Beer: A tart sour ale complements the microgreen naturally. Wild Heaven Beer, based in Avondale Estates, GA, is known for sour and Belgian inspired styles.
Spirits: A classic gin and tonic with citrus echoes the same brightness. ASW Distillery's Winterville Gin, made in Atlanta, GA, is a fitting choice.
Non-Alcoholic: A citrus kombucha is a near perfect match for sorrel's tartness. Golda Kombucha in Atlanta, GA, has citrus varieties suited to this pairing.
